What Are Cinnamon Sticks?

Cinnamon sticks, also called quills, are rolled strips of bark harvested from the Cinnamomum zeylanicum (Ceylon cinnamon) or Cinnamomum cassia (Cassia cinnamon) trees. Once dried, they curl into firm, golden-brown scrolls with a distinctive fragrance and flavor.

There are two main types:

• Ceylon Cinnamon (True Cinnamon): Thin, fragile layers with a mild, sweet flavor.
• Cassia Cinnamon: Thicker, harder bark with a stronger, spicier taste.
